People

SAMUEL COLE, Accompanying Bjorck on the move back from Europe is new business partner and fellow chef Samuel Cole, another keen surfer and long time friend of Bjorck. Originally from Wollongong, Cole has an impressive list of accolades and achievements having started his career at the highest level. Working in the kitchens of Quay, Bentley, Luke Mangan’s Glass Brasserie, Bjorck’s BW Restaurants group in Helsinki, Heston Blumenthal’s Dinner by Heston and finally cooking on luxury yachts. Working, travelling and eating his way around the world, Cole has been exposed to an extensive range of cultures, techniques and flavours to push his creativity through the kitchen and on to your palate.

TOMI BJORCK is Finland’s most cherished chef and restaurateur who achieved international success with his five Restaurants in Helsinki and Stockholm (BW-Restaurants). Before his initial arrival to Australia in 2005, Tomi worked in Michelin star restaurants around the world. Restaurant Quay and Longrain in Sydney showed him versatile and passionate ways to run successful venues and inspired him to try his own path. With an impressive and ever growing collection of awards, television shows (fourteen at last count), four cook books with the fifth on the way, you could say Bjorck has achieved it all. But for the sun, surf and martial arts loving chef and family man, and with 20 years in the restaurant industry, he felt the need for a change. After eight years back in Europe, Bjorck with wife Minka and their two sons have returned to Sydney settling down in Bondi. For Bjorck, Bondi offers the perfect canvas and opportunity to create something new to the Sydney restaurant scene. It’s time to settle down where the heart belongs.

Functions

Blanca is an excellent venue for private functions thanks to the beautiful food, vibrant site and location. The site gives the opportunity to organize a variety of day or night time events. The maximum capacity of the restaurant is 77 people inside and 9 outside. Blanca is suitable for a variety of occasions and events, ranging from early breakfast meetings to late-night gatherings. The restaurant can be used for gala or cocktail events or for more intimate dining experiences. Lunch and dinner can be arranged for both small and large parties.

Blanca is a split level restaurant and has a variety of different tables – round social tables, intimate rectangular tables, a long communal table, some bar tables and outdoor tables.
